Earlier this week, we were grilling burgers for dinner. And I looked in the fridge and saw a perfectly ripe pineapple and I knew I wanted to grill it, since the grill was hot and ready. It doesn’t get much easier than this ‘recipe’. Just slice up some pineapple and toss it on the grill! I did a few slices plain, and added a little bit of brown sugar to a few. Oh. My. Good. Golly. The ones with brown sugar tasted very much like pineapple upside down cake. Minus the cake. Warm, sweet, caramelized, and juicy. Yummo!
Serves as many as you need WW Points Per Serving: 0 if grilled plain; 1 if you add 1 tbsp brown sugar to each slice
- 1 pineapple, peeled, cored and sliced
- 1 tbsp brown sugar per slice, if desired
Place slices on hot grill. Cook until seared well and caramelized. Flip slices. Place brown sugar on top, if desired. Cook until seared on underside. Serve immediately.
