I’m always on the looking for low-point dessert recipes that still taste sweet and yummy. I saw a recipe for crepes and wanted to create something similar that was low in points…here’s what I came up with.
CARAMELIZED APPLE CREPES
1 cup flour
1-1/2 cup skim milk
2 egg whites
1 tsp oil
1 tbsp butter
**You can prepare the crepe batter up to one day ahead and store in refigerator. Also, this crepe recipe makes twice the amount of crepes you’ll need…save the rest for breakfast tomorrow!**
To make crepes, whisk together flour, milk, egg whites and oil until smooth.
Slice or chop apples. In a large skillet, melt butter over medium high heat. Add apples and sprinkle with splenda. Cook, stirring occasionally, until apples are tender and caramelized.
Heat a seperate, 8″ nonstick pan, spray with cooking spray. Pour 1/4 cup of crepe batter into pan and swirl pan to coat.
When the underside is lightly golden and the top is “dry”, flip crepe over. Cook until lightly golden on underside.
Place 1/6 of the apple mixture in each crepe and roll up. To serve, I dusted mine lightly with powdered sugar and then drizzled very lightly with a bit of caramel ice cream syrup.
