Peach Sorbet – WW

Dessert is my weakness.  Since joining Weight Watchers a little over a month ago, I’ve been pleasantly surprised at how many desserts you can actually eat without using too many points.  Here’s one I came up with as an alternative to ice cream.  Peach Sorbet.  But you, you can also do this with other fruits for other flavors.  This is a super easy recipe, but it does require freezing time, so start this early in the day.

Start by combining 1/4 cup water, ` tbsp lemon juice, and 1-1/2 tbsp sugar in a small saucepan.  Cook over medium heat until sugar is dissolved.  Remove from heat and cool sightly.  Pour this mixture into the blender.

Now, you need one  can of peaches in their own juice.  Drain the juice and add the peaches to the blender.

Process until smooth.

Scrape the mixture into a freezer safe container and place in the freezer*.

After about an hour, remove from the freezer and scrape/stir the mixture.  Repeat every hour until it’s firm enough to serve.  Dish up into bowls and enjoy!

**If you wish to make your life easier, you can freeze the mixture in an ice cream freezer…I just didn’t want to mess with it!

  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1-1/2 tbsp sugar
  • 1  can peaches, in their own juices

In saucepan, combine water, sugar and lemon juice.  Cook over medium heat until sugar is dissolved.  Cool slightly and place in blender.  Drain liquid from peaches and place peaches in blender.  Process until smooth.  Place into freezer safe container and freeze, scraping/stirring every hour until firm enough to serve.  OR, place mixture in ice cream freezer.
